Food safety and compliance

Safety you can see, and paperwork you can file.

Permitted Brooklyn kitchens, Food Protection certified leadership and daily documented inspections. Copies of every permit and report are available on request.

Our commitments

Six things every Regina kitchen does, every day.

✓

Permitted by the city

We hold a current food preparation permit issued by the NYC Department of Health and Mental Hygiene.

✓

Food Protection certified

Our kitchen leads hold the NYC Food Protection certificate, the credential the city requires for food service supervisors.

✓

Sanitation at every step

Proper sanitation is practiced at each step of preparation and packaging, from receiving to loading.

✓

Documented daily

Sanitary and safety inspections are conducted and documented every day by our executive chef.

✓

Maintained equipment

Cooking appliances go through preventive maintenance checks on a regular schedule.

✓

Nut-free kitchens

Our kitchens are peanut and tree nut free, and allergen-free menus are planned alongside the main menu.

Inside our kitchens

Built for volume. Run for safety.

At 86 Beadel Street we run separate kitchens for kosher, halal, vegetarian and regular meals, laid out for institutional production.

Room to store ingredients properly and produce every meal on the day's schedule

Ample counter space for each worker and modern cooking equipment

5+ walk-in refrigerators for meats, dairy and produce

Preventive maintenance on every cooking appliance

Backup capacity: if one kitchen is down, another covers its routes

Sourcing

Bought fresh. In and out the same day.

Our 'In and out on the same day' policy means fresh fruits and vegetables are bought early each morning, only in the amounts the next day's meals need. Very little is stored overnight, so what reaches your table is fresh.
